At Spruce our mission is simple: natural and locally focused. Every day we prepare fresh foods, utilizing the highest quality ingredients from local farmers, artisans and ranchers in Colorado, when available.

We partner with only sustainable oyster farms and fisheries and have our seafood flown in from around the world. We create daily specials, allowing the seasons to influence us in hopes of provoking your senses and take them from classic, nostalgic flavors to new, inspired dishes.
